Chickpea and Spinach Curry

Ingredients

  • 1 can chickpeas drained and rinsed
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 can coconut milk
  • 2 cups fresh spinach
  • 1 tablespoon curry powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • Heat olive oil in a pan over medium heat. Add onions and garlic, and sauté until golden brown.
  • Add curry powder and cook for another minute.
  • Stir in chickpeas and coconut milk. Bring to a simmer.
  • Add spinach and cook until wilted.
  • Season with salt and pepper. Serve hot with rice or naan bread.
