In a separate bowl, whisk eggs, melted coconut oil, and apple cider vinegar.
Combine the wet and dry ingredients and mix until well combined.
Pour the batter into the prepared loaf pan.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool before slicing.
