Lemon Basil Parpadelle

Ingredients

  • 2 cups 250g all-purpose flour
  • 3 large eggs
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • Zest of 1 lemon
  • 1/4 cup 10g chopped fresh basil
  • Olive oil for serving
  • Grated Parmesan cheese for serving

Instructions

  • Prepare the Pasta Dough: Follow the steps above, incorporating lemon zest and chopped basil into the dough before kneading.
  • Roll and Cut the Dough: Roll the dough to desired thickness and cut into wide ribbons for pappardelle.
  • Cook the Pasta: Boil in salted water for 2-3 minutes.
  • Serve: Toss with olive oil and top with grated Parmesan cheese.
