Quinoa and Black Bean Salad

Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 can black beans drained and rinsed
  • 1 red bell pepper chopped
  • 1 avocado diced
  • 1 small red onion chopped
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • In a medium saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  • In a large bowl, combine cooked quinoa, black beans, bell pepper, avocado, red onion, and cilantro.
  • In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over the quinoa mixture and toss to combine.
  • Serve chilled or at room temperature.
