Quinoa and Black Bean Stuffed Peppers

Ingredients

  • 4 large bell peppers tops removed and seeds cleaned
  • 1 cup 200g cooked quinoa
  • 1 can 400g black beans, drained and rinsed
  • 1 cup 150g corn kernels
  • 1/2 cup 75g diced tomatoes
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix cooked quinoa, black beans, corn, diced tomatoes, cumin, salt, and pepper.
  • Stuff the bell peppers with the quinoa mixture.
  • Place stuffed peppers in a baking dish and bake for 25-30 minutes.
