Quinoa and Black Bean Stuffed Peppers
Ingredients

large bell peppers
tops removed and seeds cleaned

200g cooked quinoa

400g black beans, drained and rinsed

150g corn kernels

75g diced tomatoes

teaspoon
cumin
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
In a bowl, mix cooked quinoa, black beans, corn, diced tomatoes, cumin, salt, and pepper.
Stuff the bell peppers with the quinoa mixture.
Place stuffed peppers in a baking dish and bake for 25-30 minutes.
