Quinoa Stuffed Bell Peppers

Ingredients

  • 4 bell peppers tops removed and seeds cleaned
  • 200 g 1 cup cooked quinoa
  • 1 can 400g black beans, drained and rinsed
  • 150 g 1 cup corn kernels
  • 120 g 1/2 cup diced tomatoes
  • 5 g 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 190°C (375°F).
  • In a bowl, mix quinoa, black beans, corn, tomatoes, cumin, salt, and pepper.
  • Stuff the bell peppers with the quinoa mixture.
  • Place stuffed peppers in a baking dish and bake for 25-30 minutes.
