Quinoa Tabbouleh

Ingredients

  • 200 g 1 cup quinoa, rinsed
  • 480 ml 2 cups water
  • 1 bunch parsley finely chopped
  • 1 bunch mint finely chopped
  • 4 tomatoes diced
  • 1 cucumber diced
  • 1 small red onion finely chopped
  • 60 ml 1/4 cup olive oil
  • 60 ml 1/4 cup lemon juice
  • Salt and pepper to taste

Instructions

  • In a medium saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until the water is absorbed.
  • Let the quinoa cool to room temperature.
  • In a large bowl, combine the cooked quinoa, parsley, mint, tomatoes, cucumber, and red onion.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the quinoa mixture and toss to combine.
  • Serve chilled or at room temperature.
