Spinach and Ricotta Ravioli

Ingredients

  • 2 cups 250g all-purpose flour
  • 3 large eggs
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 cup 200g ricotta cheese
  • 1 cup 150g cooked spinach, chopped
  • 1/4 cup 25g grated Parmesan cheese
  • Salt and pepper to taste
  • 1 egg for egg wash

Instructions

  • Prepare the Pasta Dough: Follow the steps above to make and roll out the dough.
  • Make the Filling: In a bowl, mix ricotta cheese, spinach, Parmesan cheese, salt, and pepper.
  • Assemble the Ravioli:
  • Lay a sheet of pasta on a floured surface.
  • Place small dollops of filling (about 1 teaspoon each) evenly spaced on the pasta sheet.
  • Brush around the filling with egg wash.
  • Lay another sheet of pasta on top and press around the filling to seal.
  • Cut out ravioli using a pastry cutter or knife.
  • Cook the Ravioli: Boil in salted water for 3-4 minutes until they float to the top.
