Prepare the Pasta Dough: Follow the steps above to make and roll out the dough.
Make the Filling: In a bowl, mix ricotta cheese, spinach, Parmesan cheese, salt, and pepper.
Assemble the Ravioli:
Lay a sheet of pasta on a floured surface.
Place small dollops of filling (about 1 teaspoon each) evenly spaced on the pasta sheet.
Brush around the filling with egg wash.
Lay another sheet of pasta on top and press around the filling to seal.
Cut out ravioli using a pastry cutter or knife.
Cook the Ravioli: Boil in salted water for 3-4 minutes until they float to the top.
